So I felt like something without chocolate today!! *gasp from the audience*
I know, I know, this is very unlike me. But warmed up, with a scoop of icecream on the side, it's so melt-in-your-mouth delicious, it'd be a shame to say "oh, but I felt like chocolate!"

The recipe itself was a long and complicated proccess, but well worth it. To start off I decided to double it. Can you believe, it made both a 9x13 pan AND an 8x8 as well?!?! You heard me! I doubled it, so that's why it made that much. Originally I was going to just keep it simple and make one, but it said just an 8x8. SO I thought I'd double it. Four sticks of butter and six cups of blueberrys later....
Yes, I wouldn't recommend doing that. Parituclarly if you don't have a pastry blender. WOAH! Four sticks of butter is not at all easy to cut in with a fork. :(
Blueberry Oatmeal Squares
2 1/2 cups rolled oats (NOT Instant)
1 1/4 cups all purpose flour
1 cup packed brown sugar
1 tablespoon grated orange rind
1/4 teaspoon salt
1 cup cold butter, cubed
1/2 cup granulated sugar
1/3 cup orange juice
4 tsp. cornstarch

One of my favorite parts of doing this was boiling the bluberries/sugar/orange juice.
It was almost like a pie filling...Except ten times better!!!!!
Question for this post: What are your favorite and least favorite things about cooking?
I would have to say one of my least favorite would be the dishes afterwards. And it not turning out. OH and having to use a fork to cut in butter. ugh!
My favorite thing would be seeing the finished product, and sampling it, and seeing how others enjoy it!!!

My answer: you can make the yummiest dessert but you have to clean up your mess. I hate that part! That is a LOT of butter! WOW, 6 cups of blueberries? That is nuts!
ReplyDeleteI know!!! I definitely won't be doubling it next time:) But it turned out well because we ended up giving some of them to a family.
