Peanut Butter Chocolate Chip Granola Bars

Are you ready for the big news?  *drumroll please* 
I DROVE WITH MY ENTIRE FAMILY IN THE CAR TODAY.
Oh yes. 



We were doing church with the Smiths and when they found out I was driving home I was subjected to pointers, tips, and teasing until I was out the door and safely deposited in the front seat.  I just love the Smiths!
 


Then, wouldn't you know, when I drove us all back out later to watch a TV show with them, Addie and Canaan were outside watching.  You would not believe how excited they were!  I drive to their house and get hugs.  What a deal!


Speaking of a deal, you will probably be pleased to know that these granola bars are chock full of healthy ingredients, protein, and, the very best: Peanut butter!  Plus you can taste it in every bite.
I've decided that the next time I make these, I'm going to substitute half of the butter for greek yogurt, plus spread them into a bigger pan so they're thinner and less of a mouthful to eat!

 

 


Peanut Butter Chocolate Chip Granola Bars

Ingredients


  • Vegetable cooking spray
  • 1 egg white
  • 1/2 cup chunky or smooth peanut butter
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup (1-stick) unsalted butter, melted (or do half cup of plain greek yogurt and half a stick of melted butter)
  • 2 cups old fashioned oats  
  • 1/3 cup miniature chocolate chips

Directions

Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.

Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.

In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, and oats. Stir to combine, then add the chocolate chips.

Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.

    1. I know. Either way, thick or thin, I'm pretty sure they would taste just as good and peanut buttery! :)
